Art of Etiquette Dinner for Preferred Members

Hi!  I just wanted to tell you a little about my event last Wednesday at the resort.  We invited the Preferred Members to an amazing, complimentary evening in the Lakeview Ballroom.  We enjoyed 5 courses of delicious food prepared by Chef Phil.  The first course was Lobster Bisque with sweet potato hash, creme fraiche, and micro cilantre.  The second course was my favorite; lightly blackened ahi tuna with compressed charred pineapple with mint and coconut rum avocado pineapple relish and mint oil.  Actually , the third course was really really good , too!  It was a Butter Salad with Asian pears.  The plate was decorated with buttermilk gorgonzola herb dressing, pickled radish, and candied walnuts.  All of the members asked if this could be on the menu every day!!  We enjoyed an intermezzo consisting of strawberry gazpacho to cleanse our palates.  Following was the main course, a short rib, which Chef Phil had been slow cooking for 48 hours.  He served it with a port wine natural au jus reduction, celery root puree, and roasted baby squash and carrots.  The grand finale was actually 3 desserts on one plate.  There was bread pudding souffle, bananas foster, and a Bailey”s Irish Creme spiked chocolate mint chip milkshake!!!  I have never been so full in my life.  Every single person stayed until the very end of our dinner. While we were feasting, Mrs. Dana Mullaney and Mr. Joe Kelley  guided us through the proper etiquette used in this formal dining experience.  We learned a lot and had a lot of laughs.  It was a truly magical evening!!!!
