Vintage Wine Dinner…..Music to your Palate!!!

Wow!  Chef Phil really outdid himself last Thursday Night!  In addition to wine being paired with every course, there was music paired also!  He started off with a cajun truffle butter poached spiny lobster from New Orleans with beautiful jazz music to go along.  Next came smoked Jamaican jerk chicken thighs with coconut milk corn porridge and sweet plantain dumplings.  Reggae music was played, which was really fun!  Central American cuisine was served next accompanied by latin music and a ...

Once in a Blue Moon!!!

Hi!  Last Friday night  there was a beautiful Blue Moon over Lago Mar.  This only occurs every 2 to 3 years.  It was spectacular!!  Some of our guests were actually sitting down of the beach enjoying the moon when there was news that one on the turtle nests a short distance to the north of us was hatching.  They ran down the beach and were in awe , as they watched 50 baby turtles make their way down to the ...

Mango-Passion Fruit Manicure

Hi!  Lucky for us Tropical Storm Isaac is passing us by.  We have had some rain and light wind, but that is it!  Being stuck indoors for a couple of days was difficult (especially with 4 kids), but I chose to make the best of it by  visiting The Spa for a Mango-Passion Fruit Manicure.  I would have loved to try the pedicure, too, but I did not want to leave my oldest in charge for too long..... During this ...

Margaritaville Parrot Head Sun Lotions in Soda Shop

Hi!  We have a relatively new line of sun lotions in The Soda Shop which are really great.  This past weekend the kids and I tried them while we were were enjoying the sunny weather.  The kids loved the "Fins Up!' instant dry sunscreen spray spf 30 for their little bodies.  The "Parakeet Kids"  sunscreen lotion spf 50 worked perfect on their faces. I love it because it is water resistant for 80 minutes.  We definitely put that to the ...

SPOTLIGHTING MIKE HOLMES, OUR BARTENDER/PHOTOGRAPHER Hi. If you’ve been to the Lago Mar pool bar over the last seven years, you probably know Mike Holmes as our friendly bartender who serves up delicious frozen poolside drinks. (Mike’s come to my rescue on several occasions with a refreshing wine or margarita to help relieve stress!) But as the afternoon sun fades, Mike trades his blender for a camera and transforms into our resort photographer at sunset! That’s right, he pulls double duty ...

Lunch in the Palm Garden Restaurant

Hi!  I just met a really good girlfriend of mine in the Palm Garden Restaurant at Lago Mar and had the most delicious lunch.  She ordered the grilled lemon swordfish with keylime cilantro vinaigrette and charred tomato mango salsa vegetables.  It was actually one of our gluten-free items, which we now offer.  She raved about the presentation as well as the taste.  I'm pretty sure that I have mentioned before that we are one of the few restaurants that serve ...

Attended Interesting Conference

Hi!  I just returned from a fabulous conference for the Resort Hotel Association.  This was the first time for me to attend this meeting, which was held at the Greenbrier in West Virginia.  What an amazing hotel that is!  My kids loved the mountains and the real "Christmas" trees growing everywhere.  They especially loved the lightning bugs.  That was a big hit!  They also loved meeting the other kids that were children of the attendees.  For those of you that ...

Fourth of July was one of the Best!!

Hi!  Sorry it took me so long to report about 4th of July but I need to say that it was definitely the best ever!  The weather was absolutely perfect all day and night. During the day we had the steel drummer by the pool, which everyone loved.  When he left our guitarist, Craig Fitch, play through the evening.  At about nine our guests and members gathered down on the beach with chairs and big beach blankets and enjoyed the ...

Response to Facebook Friend about “T-bone and Fries”

Hi!    I love getting comments to my blog!!!   I wanted to write this entry in response to Pete Barrett's inquiry about whether there was a t-bone and fries on our menu.   We actually have a 6 oz. beef tenderloin on our new menu, which I had to try in order  to report to you how delicious it is.  It comes with a celery root puree, caramelized shallot butter, and fig cabernet glaze.  Not only does it taste ...

New Menu In Acquario

Hi!  A couple of friends joined me Friday evening for a delicious dinner..  Our new menu is out and we are getting great revues!!!  For starters our group feasted on tequila lime shrimp and braised short rib with butternut squash ravioli.  For my main course I tried the local swordfish, which was served blackened with plantain jasmine rice and avocado pineapple relish.  I enjoyed every bite and had to force myself to save room for dessert.  Guy, our server, exhibited ...
