Hi! After the busy holiday week I just didn’t feel like cooking. Instead, I took the kids over to the resort and we had an awesome dinner at Lago Mar!
I’m so glad I didn’t feel like cooking because our meal was perfect. We ate on the Sea Grape Terrace and enjoyed the warm, and beautiful, heater that was placed near our table. I had the Fish du Jour, which was pan flashed halibut with lobster sauce and coconut sweet potato mash. Chef Phil always adds fresh vegetables to the dishes and last night I got asparagus, red peppers and zucchini. My meal was delicious! The kids all ordered different dishes. Demi had the Pinot Noir Glazed Salmon, one of her favorites, cooked over cedar wood with boursin cheese grits and cherry pinot noir glaze. Dani ordered the Filet Mignon, Chipper went with chicken fingers and Sailor had the fish and chips. We all had a great dinner and ate everything on our plates! Afterwards, the kids ran off to The Soda Shop for ice cream cones!
At the end of the night, I got to go home to a nice clean house and no dishes waiting in the sink. Dinner at Lago Mar - I definitely need to do this more often!
