Lago Mar Goes Green – A St. Paddy’s Day Recap

Hi! I hope everyone had a great St. Patrick’s Day last week! At the resort, Chef Phil did a great job with the authentic Irish food while the Wine Cellar Lounge and Acquario were looking quite festive. The kids and I ran over after tennis to celebrate the holiday and enjoy some of Chef’s Irish offerings. 20160317_113331The boys ordered the Dark Beer Sous Vide Corned Beef with beer braised cabbage, boiled potato, baby carrots and sweet peas. They loved it! I enjoyed the Shamrock Salmon on the cedar plank with Irish Whiskey Sauce, while the girls were set on the Irish Herb Crusted Lamb Chops with Guiness sauce, spinach and kale whipped green potato. Demi and Dani love any opportunity to eat lamb because in their research they have learned that it is the healthiest meat one can choose to eat. Spinach and kale are also two of their favorite super foods. We all loved the Irish Soda Bread!

Now we are getting ready to start our Easter Activities which begin tomorrow with Farm Night. I will keep you posted 🙂
