Wow! Chef Phil really outdid himself last Thursday Night! In addition to wine being paired with every course, there was music paired also! He started off with a cajun truffle butter poached spiny lobster from New Orleans with beautiful jazz music to go along. Next came smoked Jamaican jerk chicken thighs with coconut milk corn porridge and sweet plantain dumplings. Reggae music was played, which was really fun! Central American cuisine was served next accompanied by latin music and a 2009 Pinot Noir from Napa Valley. The main course was Chef’s version of country-southern comfort food. It was a braised beef belly, southern comfort sauce, braised red cabbage, cherrywood bacon escarole, sous vide country fried New York strip steak with red wine pickled onion rings and Virginia ham mac n cheese in a parmesan cup. This was paired with a 2009 Robert Mondavi Cabernet Sauvignon. OMG, I was so full!!! Of course, he played country music during this course. I felt like we all needed to start square dancing to burn off some of the calories we were consuming!! For dessert we had progressive music in the backgound while Chef prepared raspberry crumbs using liquid nitrogen for all of us to see. The crumbs were then put over raspberry-lime tequila gelatin squares. There was also buttermilk panna cotta with white chocolate cherry compote. If that wasn’t enough to satisfy your sweet tooth there were also dark chocolate covered cherries!! This wine dinner was OVER THE TOP!!!!!!!! I can’t wait for the next one…Deb Ps I forgot to mention that my favorite wine of the evening was the 2010 Chardonnay from Santa Lucia Highlands, which was served with the first course! It was delicious!!!!!
